Ac\u00e1 en Venezuela lo llaman paletilla.<\/p>\n\n\n\n<p>Lorem Ipsum has been the industry&#8217;s standard dummy text ever since the 1500s.<\/p>\n\n\n\n<p>Es un corte plano y rectangular que proviene del hombro de la res; tiene una membrana en el medio que hay que remover para que queden dos filetes limpios (este trabajo lo puedes pedir educadamente a tu carnicero de confianza, o hacerlo tu mismo si eres ducho en la materia).<\/p>\n\n\n\n<p><span style=\"font-family: inherit; font-style: inherit; font-variant-caps: inherit;\">Su cocci\u00f3n es r\u00e1pida -3 a 5 minutos por lado- en brasa medio fuerte o en plancha. \u00a0La temperatura interna ideal es alrededor de 130\u00baF (54,4\u00baC), aunque al final es cuesti\u00f3n de gustos;\u00a0<\/span><span style=\"font-family: inherit; font-style: inherit; font-variant-caps: inherit;\">en lo personal me gusta cocinarlo dando vuelta cada 30-45 segundos apr\u00f3x, hasta alcanzar los 125 a 128\u00baF, para luego dejarlo reposar unos 3 minutos, cortar y servir.<\/span><\/p>\n\n\n\n<p><span style=\"font-family: inherit; font-style: inherit; font-variant-caps: inherit;\"><\/span><span style=\"font-family: inherit; font-size: inherit; font-style: inherit; font-variant-caps: inherit;\">Al ser un corte delgado, le va muy bien las marinadas.
